Another (very different) one that comes to mind is The Left Hand of Darkness by Ursula Le Guin. And, much less "highbrow" and more patchy, the Horus Heresy series by Warhammer.
Huh, I never thought about looking at Warhammer 40K’s religious themes in a serious manner. Based on the die hardness of its fans, I’ll leave that to someone much more qualified.
